Southern-Style Corned Beef Hash
Nations Best®Corned Beef and potatoes make a wonderful fry up. This hash is enhanced with orange zest, for a subtle, citrus flavor. Top with poached eggs for a traditional combo.

Ingredients
3 Tbsp butter
1/4 c minced onion
2 c Nations Best®Corned Beef Round, coarsely-chopped
3 c cooked, diced potatoes
1/4 prepared or leftover brown gravy
3 Tbsp coarsely-chopped flat-leaf parsley
1 Tbsp finely-grated orange zest
Salt & freshly-ground black pepper, to taste
Directions
Serves 2
Melt the butter in a large skillet over medium-low heat. Add the onion and cook, stirring, for 3 minutes.
Add the corned beef, potatoes, gravy, 2 tablespoons of the parsley, the orange zest, and salt and pepper.
Cook over medium-high heat, stirring occasionally until golden brown, about 10 minutes.
Spoon onto plates and sprinkle with the remaining tablespoon of parsley. Serve immediately.
