Pastrami, Avocado & Arugula Salad

Pastrami doesn’t often find its way into a salad, but it should. The peppery arugula against the smoky Nations Best® Pastrami and creamy avocado are especially delicious together.

Ingredients

  • 6 slices Nations Best® First Cut Pastrami, shredded coarsely

  • 1 bunch arugula (6 oz), stems trimmed, leaves washed and patted dry

  • 1 ripe avocado, pitted, peeled and diced

  • 1 large ripe tomato, diced

  • 1 Tbsp drained prepared horseradish

  • 1 Tbsp fresh lime juice

  • 1 Tbsp heavy (whipping) cream

  • 1 Tbsp finely snipped fresh chives

  • Salt & freshly-ground black pepper, to taste


Directions

Serves 2

  1. Combine the pastrami, arugula, avocado and tomato in a bowl.

  2. In a small bowl, whisk together the horseradish, lime juice, cream, and chives. Season with salt and pepper. Drizzle over the salad and toss well. Serve immediately.
