Harvest Corned Beef in a Crock Pot

A flavorful autumn dish. Serve the rich cooking “broth” alongside the Nations Best® Corned Beef Brisket, or reserve for cooking other vegetables or for soup!

Ingredients

  • 1 Nations Best® Corned Beef (about 3 lb, raw)

  • 8 small red potatoes

  • 3 carrots, cut into chunks

  • 1 onion, peeled and cut into 6 wedges

  • 1/2 green cabbage, cut into chunks

  • 4 c apple juice

  • 1 c (packed) light brown sugar

  • 1 Tbsp Dijon mustard


Directions

Serves 6

  1. Rinse the corned beef and place in a large crock pot with all of the vegetables.

  2. Combine the apple juice, brown sugar, and mustard in a bowl and then pour over the meat and vegetables.

  3. Cook on high heat for 4 to 5 hours, or on low heat for 8 to 10 hours, until the meat is tender. Remove the meat to a cutting board and slice thinly against the grain. Serve with the vegetables and the broth.
