Brisket Sandwich with a Mango-Jicama Slaw
Nations Best®First Cut Brisket just got an island makeover. This mango-jicama slaw adds a taste of the tropics. Sweet potato fries are a fabulous accompaniment.

Jicama-Carrot-Mango Mayo Slaw
1 c prepared mayonnaise
1/4 sour cream
1 Tbsp orange zest
2 Tbsp fresh orange juice
1 ripe mango, pitted, peeled and cubed
1 tsp ground cumin
2 c each grated jicama and carrots
1/4up chopped fresh cilantro leaves
Sandwich
8 Kaiser rolls (or other)
3 lb thinly-sliced Nations Best®First Cut Corned Beef Brisket
8 ounces thinly-sliced Monterey Jack cheese

Serves 8
Prepare the slaw. In a food processor, combine the mayonnaise, sour cream, orange zest, orange juice, mango and cumin until smooth.
Mix the mayo mixture, jicama, carrots and cilantro in a bowl. Toss well.
In the rolls, layer the brisket, cheese and slaw.
