Pastrami, Tomato & Cucumber Pita Sandwich

Wrapped in the traditional Mediterranean flatbread, Nations Best® Pastrami lends a salty, smoky taste to this refreshing salad of lettuce, cucumber, tomatoes and scallions. Nations Best® Turkey or Tongue work equally well.

Ingredients

  • 3 oz Nations Best® Bottom Round Pastrami, cut into 1/2 inch cubes

  • 1/2 c torn tender lettuce

  • 1/3 c diced cucumber, in 1/2 inch cubes

  • 1/3 c halved pear tomatoes

  • 2 Tbsp chopped scallions

  • 1 Tbsp coarsely-chopped fresh basil leaves

  • 2 Tbsp ranch dressing

  • Salt & freshly-ground black pepper, to taste

  • 1 pita bread, warmed if desired


Directions

Serves 1

  1. Toss the pastrami, lettuce, cucumber, tomatoes, scallions, basil, and dressing together in a bowl. Season with salt and pepper.

  2. Cut the top 1-inch off the pita and fill it with the pastrami mixture.
