Corned Beef Hash Breakfast Burrito

Ingredients

  • ½ pkg. Potatoes O’Brien (diced potatoes with onions and peppers)

  • 6-8 slices corned beef

  • 3 eggs

  • 2 large flour tortillas

  • Fresh parsley, roughly chopped

Directions

Serves 2

  1. Prepare the potatoes according to package directions. Warm up the corned beef in the same skillet and mix to combine.

  2. In a small skillet, lightly scramble the eggs and cook to your liking.

  3. To assemble, warm up in the tortillas in the microwave covered with a damp paper towel for about 20 seconds. Top the tortillas with scrambled eggs, prepared corned beef and potatoes, and freshly chopped parsley, then wrap into a burrito and serve warm.
