Corned Beef Hash Breakfast Burrito
Ingredients
½ pkg. Potatoes O’Brien (diced potatoes with onions and peppers)
6-8 slices corned beef
3 eggs
2 large flour tortillas
Fresh parsley, roughly chopped
Directions
Serves 2
Prepare the potatoes according to package directions. Warm up the corned beef in the same skillet and mix to combine.
In a small skillet, lightly scramble the eggs and cook to your liking.
To assemble, warm up in the tortillas in the microwave covered with a damp paper towel for about 20 seconds. Top the tortillas with scrambled eggs, prepared corned beef and potatoes, and freshly chopped parsley, then wrap into a burrito and serve warm.
